    Chop boneless chuck roast into large, evenly sized pieces.

    Sear meat in batches over high-heat in dutch oven .

    Discard any oil left in the pot and add new oil.

    Add yellow onion (chopped) and sautee until softened.

    Add tomato paste and cook until it darkens and sticks to the pan.

    Add garlic (sliced) and cook until fragrant.

    Add rich beef stock and ancho chilies , guajillo chilies , and chilies de arbol .

    Add black peppercorns , coriander , bay leaves , and cinnamon stick to cheese cloth and tie and toss into pot.

    Bring to a simmer, cover and braise for ⏱️ 1 hour .

    Remove chilies along with 1-2 cups of braising liquid and blend until smooth.

    Return puree to pot.

    Bring bag to simmer, cover, and braise for another ⏱️ 1.5-2 hours .

    Remove meat and discard bones.

    Shred beef with some fat.

    Salt braising liquid to taste.

    Dunk corn tortillas in broth.

    Fry on cast-iron skillet over medium heat and top with Oaxaca cheese .

    Cook until cheese starts to melt.

    Add meat to one side of the tortilla and add a spoonful of broth.

    Fold and fry on both sides until crisp on both sides cheese is fully melted.

    Serve with ramekin of broth with sweet onion (diced) and fresh cilantro for dunking.
