🍳 Cookware
- dutch oven
- cast-iron skillet

1Chop boneless chuck roast into large, evenly sized pieces.boneless chuck roast: 1 lb

2Sear meat in batches over high-heat in dutch oven .

3Discard any oil left in the pot and add new oil.

4Add yellow onion (chopped) and sautee until softened.yellow onion (chopped): 1

5Add tomato paste and cook until it darkens and sticks to the pan.tomato paste: 1 tbsp

6Add garlic (sliced) and cook until fragrant.garlic (sliced): 8 cloves

7Add rich beef stock and ancho chilies , guajillo chilies , and chilies de arbol .rich beef stock: 10 c, ancho chilies: 5, guajillo chilies: 5, chilies de arbol: 2

8Add black peppercorns , coriander , bay leaves , and cinnamon stick to cheese cloth and tie and toss into pot.black peppercorns: 1 tbsp, coriander: 1 tbsp, bay leaves: 6, cinnamon stick: 1

9Bring to a simmer, cover and braise for ⏱️ 1 hour .

10Remove chilies along with 1-2 cups of braising liquid and blend until smooth.

11Return puree to pot.

12Bring bag to simmer, cover, and braise for another ⏱️ 1.5-2 hours .

13Remove meat and discard bones.

14Shred beef with some fat.

15Salt braising liquid to taste.

16Dunk corn tortillas in broth.corn tortillas: 6

17Fry on cast-iron skillet over medium heat and top with Oaxaca cheese .Oaxaca cheese: 1 lb

18Cook until cheese starts to melt.

19Add meat to one side of the tortilla and add a spoonful of broth.

20Fold and fry on both sides until crisp on both sides cheese is fully melted.
